Protein oat porridge with whey

This recipe uses 40 g of rolled oats for one serving and separates the liquid between cooking and the whey mixture. This way, you can choose between a thicker or creamier porridge without prolonging the heat too much.

Ingredients

For the porridge

• 40 g of medium or fine rolled oats

• 200 ml of milk, vegetable drink or water for cooking

• 30 g of whey protein in the flavor of your choice

• 30 to 60 ml of milk, vegetable drink or water at room temperature to dissolve the whey and adjust the texture

• 1 pinch of salt

• 1/2 teaspoon of cinnamon powder, optional

Preparation method

1. Heat the liquid

Put 200 ml of milk, vegetable drink or water in a small pan, add a pinch of salt and heat over medium heat until it starts to steam and comes close to boiling.

2. Cook the oats

Add the oats, lower to medium-low heat and cook for 4 to 6 minutes, stirring frequently. Stop when the flakes are soft and the base is slightly thicker than the texture you want to serve, as the whey will still thicken the porridge.

3. Dissolve the whey separately

While the oats cook, place the whey in a small bowl and mix with 30 ml of the liquid at room temperature. Stir until a smooth cream forms. If your whey forms a very firm paste, add more liquid little by little, without exceeding the reserved 60 ml.

4. Incorporate whey outside the fire

Turn off the heat and wait about 30 seconds, just until the active boil stops. Add the whey cream and stir vigorously until the porridge is uniform. Adding off heat is useful for controlling consistency and reducing the chance of lumps.

5. Adjust the texture and serve

For a thick porridge, stop when the mixture is homogeneous and use only the liquid necessary to dissolve the whey. For a creamier result, add the rest of the reserved liquid, about 10 ml at a time, stirring until you reach the desired consistency. Serve immediately and top with cinnamon and, if desired, banana, blueberries and some oat flakes.

How to store

The best result is served immediately. If there is any leftovers, transfer to a sealed container and refrigerate for up to 2 hours; keep refrigerated at 5°C or below. Why was my porridge lumpy after whey?
