Fluffy carrot cake with hard chocolate frosting, without solarium

This version uses the carrots weighed down after peeling to reduce one of the cake's biggest sources of variation. The carrot, eggs, oil and sugar are beaten until a smooth cream is formed; flour and yeast are then added by hand to preserve a lighter dough.

Ingredients

For the dough

• 270 g peeled carrot, cut into thin slices

• 3 large eggs, approximately 150 g without shell, at room temperature

Preparation method

1. Heat the oven and prepare the pan

Preheat the oven to 180°C for at least 15 minutes. Grease and flour a mold with a central hole measuring approximately 24 cm in diameter and 8 cm in height, removing any excess flour. The size of the pan is important for the dough to bake evenly without remaining raw in the center.

2. Mix the dry ingredients

In a large bowl, whisk together the flour and salt. Leave the yeast separate to go in at the end. This step prevents the flour from having to be blended in a blender.

3. Beat the carrot base

Place the heavy carrot, eggs, oil and sugar in a blender. Beat for 2 to 3 minutes, stopping once to scrape the sides if necessary, until smooth and without visible pieces of carrot.

4. Add the flour without weighing the dough

Pour the carrot cream over the flour. Mix with a wire whisk or spatula, using short movements, just until the dry spots disappear. Add the yeast and mix just until distributed. Do not continue beating after the flour is hydrated.

Immediately transfer to the pan and level. Bake at 180°C for about 35 to 45 minutes. Avoid opening the oven for the first 30 minutes. After 35 minutes, check the center of the dough, at the highest part of the cake.

6. Cool and unmold

When baked, remove from the oven and let it rest in the pan for 15 minutes. Use a thin spatula around the edges if necessary and remove from the mold. Let cool completely on a wire rack or plate before frosting.

7. Make the chocolate frosting

In a small saucepan, mix sugar, chocolate powder, butter and water while still off the heat. Place over medium heat, stirring until it starts to boil. After boiling, cook for 2 to 3 minutes, stirring continuously, until the bubbles become more dense and the syrup covers the spoon in a thin layer.

8. Cover and let the cone set

Pour the still hot icing over the cold cake, distributing it all at once. If necessary, tilt the plate or make few movements with the spoon, as the syrup will begin to crystallize quickly. Let it rest for about 15 to 20 minutes before cutting.

Right spot / how to know it’s ready

The cake must be risen, with a firm and slightly golden surface. When you press the top with your fingertip, the dough should spring back without leaving a deep mark. A toothpick inserted into the highest part should come out clean or with few moist crumbs, never with pasty dough. Once cooled, the crumb should remain orange, soft and airy, without a compact, moist band at the base.

The icing is ready when, once cold, it loses its liquid appearance, becomes firm to the touch and forms a thin film that can crack when cut. If it remains sticky and runny after 20 minutes, the pot lacked concentration.
