Brazilian Moscow Mule with ginger foam

Moscow Mule in the reinterpretation widespread in Brazilian bars, with a citrus vodka base, light carbonation and a cold ginger foam on top. This recipe follows the Brazilian reinterpretation of the Moscow Mule, marked by the ginger foam topping. It is not presented like the classic version: the formulation recognized by the International Bartenders Association uses vodka, ginger beer and fresh lemon juice. Here, the base is drier and slightly carbonated to receive a sweet, citrusy and spicy foam without making the drink heavy.

Ingredients

For the ginger syrup

• 100 g fresh ginger, washed and cut into thin slices

• 150 g of refined sugar

• 150 ml of filtered water

For the ginger foam

• 120 ml of cold ginger syrup

• 30 ml fresh Tahiti lime juice, well strained

• 30 ml of very cold filtered water

• 1/3 level teaspoon of culinary emulsifier for ice cream, also respecting the manufacturer's instructions for use

For 1 Moscow Mule

• 50 ml of vodka

• 20 ml fresh Tahiti lime juice, strained

• 5 ml of ginger syrup

• 70 ml of very cold sparkling water

• 35 to 40 ml of ginger foam

• ice cubes large enough to fill the mug

• 1 slice of Tahiti lime and 2 thin slices of ginger to finish

Preparation method

1. Make the ginger syrup

Place the ginger, sugar and water in a small saucepan. Place over medium heat, stirring just until the sugar dissolves. When it starts to boil, lower the heat and cook for 12 to 15 minutes, without letting it caramelize. Turn off and leave to infuse for 15 minutes.

2. Strain and cool the syrup

Pass the syrup through a fine sieve, without squeezing the ginger excessively. Let it lose its heat and refrigerate until it is very cold. Set aside 120 ml for the foam and 5 ml for the drink.

3. Beat the ginger foam

In a tall, narrow glass, add 120 ml of cold syrup, 30 ml of lemon, 30 ml of ice water and the emulsifier. Beat with a hand mixer or electric mixer for 2 to 4 minutes, keeping the beater close to the surface to incorporate air. The mixture should lighten, increase in volume and form fine bubbles. If it is warm or too fluid, refrigerate for 10 minutes and blend again.

4. Assemble the drink base

Fill a copper mug with a food-grade lining, such as stainless steel, or a lowball glass measuring approximately 350 ml with ice. Add the vodka, 20 ml of lemon and 5 ml of ginger syrup. Mix for about 5 seconds to freeze and integrate.

5. Add gasification

Pour the very cold sparkling water down the side of the mug and make just one or two gentle turns with the spoon. Avoid shaking to preserve the gas.

6. Finish with the foam

Place 35 to 40 ml of foam over the drink with a spoon, forming a layer of about 3 cm. Finish with the lemon slice and thin slices of ginger. Serve immediately.

Right spot / how to know it’s ready

The base should be very cold, slightly effervescent and citrusy, with the ginger spiciness appearing without covering up the vodka. The foam should have small bubbles, an airy, creamy texture and enough volume to remain on top of the drink for a few minutes before starting to combine. When lifting a spoonful, it should fall slowly, not run like thin liquid or become stiff like whipped cream.

Work with everything very cold

Cold syrup, water and lemon help the foam gain body and also reduce the dilution of the drink. If possible, leave the mug and the container used to whip the foam in the refrigerator for a few minutes.

Remove the foam, syrup and sparkling water. Use 45 ml of vodka, 120 ml of ginger beer and 10 ml of fresh lemon juice, proportions currently listed by the International Bartenders Association. The result is more carbonated and depends on the flavor of the ginger beer, not a creamy topping.

Without culinary emulsifier

For a creamier home alternative, whip 100 ml of very cold heavy cream with 20 ml of ginger syrup and 5 ml of lemon juice until very soft peaks form. Use 30 to 35 ml per drink. This change adds dairy, makes the foam richer and less light and moves away from the airy texture typical of bar versions made with emulsification.

With ginger beer on a Brazilian base

You can swap the sparkling water for 70 ml of ginger beer. In this case, omit the 5 ml of syrup from the base and taste before finishing, as the drink will be sweeter and more intense in ginger.

How to store

Store the cold syrup in a clean, well-closed and refrigerated container. To better preserve the fresh aroma of ginger, preferably use within 2 weeks; Discard before then if mold, fermenting odor or unusual change appears. Ready-made foam loses volume over time: maintain it

refrigerated and use the same day, blending quickly again if necessary. The assembled Moscow Mule must be served immediately, as the ice dilutes the base and the carbonation is lost.

Avoid leaving the acidic drink in direct contact with bare copper. The acidity and ginger pair well with savory and crunchy snacks, such as seasoned chestnuts, potatoes or breaded meats, without requiring elaborate garnishes other than lemon and ginger.

Common mistakes

Why did my foam sink immediately?

The mixture may be hot, not very aerated or with an insufficient proportion of emulsifier for the brand used. Cool well, check the manufacturer's instructions and beat again, incorporating air close to the surface. Also avoid pouring the foam all at once; support it over the drink with a spoon.

Why did the drink get sick?

Excess syrup or a very thick layer of foam concentrates sugar. Keep just 5 ml of syrup in the base and use about 35 to 40 ml of foam. If your finished ginger beer or foam is already quite sweet, reduce or eliminate the syrup in the base.

Why did the Moscow Mule run out of steam quickly?

Ill-cold sparkling water, small ice and stirring too much accelerate the loss of carbonation. Use freshly opened, very cold water, add it last and stir as little as necessary.
