Classic Piña Colada: rum, pineapple and coconut cream in the right proportion

The base formula below is based on the current International Bartenders Association sheet: 50 ml of white rum, 50 ml of fresh pineapple juice and 30 ml of coconut cream, shaken with ice. Because coconut labels are ambiguous, this recipe specifies cream of coconut; the Caribe Hilton also lists Coco López on its Piña Colada. Coconut milk, unsweetened coconut cream and condensed milk are not equivalent. The historic formula published by the hotel itself is different and includes cream and a greater proportion of pineapple.

Ingredients

• 50 ml white rum

• 50 ml fresh pineapple juice, well chilled and strained

• 30 ml of cream of coconut, or sweetened coconut cream suitable for cocktails, well homogenized

• 90 g of crushed ice or small cubes

• 1 slice of pineapple to decorate, optional

• 1 maraschino cherry for garnish, optional

Preparation method

1. Homogenize the coconut cream

If the cream of coconut is separated in the package, mix or shake until uniform before measuring. Cold ingredients help keep the drink creamy without requiring excessive ice.

2. Beat the Piña Colada

Place the white rum, pineapple juice, cream of coconut and ice in a blender. Blend on high speed for about 10 to 15 seconds, just until the ice is thin and the mixture appears uniform and creamy.

3. Serve immediately

Pour into a hurricane glass or tall glass measuring approximately 300 ml. Garnish with the pineapple slice and cherry, if using, and serve with a straw.

Right spot / how to know it’s ready

The Piña Colada should be cold, opaque and creamy, but still fluid enough to drain from the blender without needing to be removed with a spoon. The ice should be well crushed, without large pieces, and there should not be a separate oily coconut layer on the surface. If it is too thick, pulse with 10 ml of pineapple juice; if it is too thin, add 15 to 20 g of new ice and pulse for a few seconds.

Tips for the recipe to work out

Use the correct coconut product

Cream of coconut is a sweetened and concentrated ingredient used in cocktails. Coconut milk and unsweetened culinary coconut cream have less sweetness and different behavior, so the direct exchange alters body and balance.

Work with everything very cold

Cold rum, juice and coconut cream reduce the time needed in the blender. This helps preserve the texture and prevents the ice from melting too much before serving.

Weigh the ice

Using approximately 90 g of ice makes dilution more predictable. Filling the blender jar without measuring increases the variation between one preparation and another and can make the Piña Colada watery.

Do not beat for too long

After the ice is thin and the mixture is uniform, continue only as necessary. Blending for a long time heats the drink and increases dilution.

Substitutions and variations

Can I use unsweetened culinary coconut cream?

It can only be used as an adaptation, not as an equivalent exchange. Because fat content and sweetness vary between brands, you will need to sweeten separately and adjust the ice; the result is less standardized than with cream of coconut.

Can I use coconut milk?

Coconut milk is more fluid and normally unsweetened. In a direct exchange, the drink becomes less sweet and has less body. If it is the only option, treat it as a variation and rebalance sweetness and body little by little, as there is no direct equivalence in volume between the products.

And condensed milk?

Condensed milk is not equivalent to coconut cream: it adds milk flavor, lots of sugar and a different texture. It can generate a creamy Brazilian version, but it fails to reproduce the base formula of rum, pineapple and coconut.

Can I add lemon?

Some versions use a small touch of lemon to balance the sweetness, and the IBA record itself records this use as a historical note. Start with just a few drops or up to 5 ml; more than that clearly changes the profile of the drink.

How to serve / side dishes

Serve as soon as it comes out of the blender. Piña Colada goes best with savory snacks and grilled preparations, which contrast with the sweetness and creaminess of the drink.

How to store

The ready-made drink is not suitable for storage because the ice melts and the emulsion loses texture. To advance preparation, keep the ingredients separated and refrigerated according to the instructions on the packaging and mix only before serving.

Common mistakes

Why is my Piña Colada watery?

This can happen with excess ice, ingredients at room temperature or too long in the blender. Measure the ice, chill the liquids first and stop blending as soon as the texture is uniform.

Why did the coconut separate?

This can happen when the coconut product was already separated in the packaging or when the drink has been sitting for a long time. Homogenize the cream of coconut before measuring, beat until uniform and serve immediately.

Why was it too sweet?

Sweetness varies greatly between brands of cream of coconut and between pineapple juices. Maintain the basic proportion, prefer juice without added sugar and, if necessary, use a few drops of lemon to bring contrast without transforming the drink into another recipe.
