Crispy Air Fryer Crackling with Pork Belly

The result of this version depends more on standardization than on a single time: cubes of around 3 cm cook more evenly, a moderate first stage helps to release some of the fat and the hotter final stage concentrates the crispiness in the leather. Ingredients

• 600 g fresh pork belly with skin, cut into cubes of approximately 3 cm

Preparation method

1. Dry and standardize the cubes

6. Check the point and rest

Keep the cubes close to 3 cm

Can I wear a belly button without leather?

Common mistakes

Why did the leather become rubbery?

The most common causes are a damp surface, an overfilled basket or insufficient time in the hottest final stage. If the meat is already cooked, separate the pieces, leave the skin facing up and do short cycles of 3 to 5 minutes at 200°C, making sure it doesn't burn.

Why did the crackling dry out?

Cubes that are too small or too long at a high temperature cause the meat to lose moisture before the leather reaches its best point. Standardize to about 3 cm and remove smaller pieces as soon as they are ready.
