Homemade fast food-style nuggets: uniform dough and thin, crispy shell

The result sought here is different from a piece of breaded chicken: the meat is processed until it becomes a thin, adherent dough, shaped into pieces of regular thickness and covered with a light layer of starch and fluid dough. Working with cold chicken, firming the pieces before breading and controlling the oil temperature are the points that most influence the final texture.

Ingredients

For the chicken pasta

• 700 g skinless, boneless chicken breast, very cold, cut into cubes

• 200 g skinless, boneless chicken thighs, very cold, cut into cubes

• 11 g of fine salt, about 2 level teaspoons

• 2 teaspoons of onion powder

• 1 teaspoon of garlic powder

• 1/2 teaspoon ground white pepper

• 1 teaspoon of sugar

• 25 g corn starch

• 40 ml of very cold water

For the pre-coat

• 70 g cornstarch

For the breading dough

• 100 g of wheat flour

• 70 g cornstarch

• 1 teaspoon of chemical baking powder

• 4 g of fine salt, about 3/4 teaspoon

• 1 large egg, chilled

• 180 ml of very cold sparkling water

For frying

• Enough neutral oil for deep frying, about 1.2 liters in a medium pan

Preparation method

1. Cool the chicken and organize the equipment

Spread the breast and thigh cubes on a baking tray and place in the freezer for 15 minutes, just until they are firm around the edges, without freezing completely. Prepare the food processor, a baking tray lined with parchment paper and space in the freezer. If the processor bowl is small, work the meat in two batches to avoid heating the mixture.

2. Process until a uniform dough is formed

Place the cold chicken in the processor and pulse until it is finely chopped. Add the salt, onion powder, garlic powder, white pepper, sugar and starch. Process again and add the ice water little by little. Stop to scrape the sides when necessary and continue only until you have a thick, homogeneous and sticky paste, with no visible cubes of meat. Do not prolong processing after this point, as friction heats the dough.

3. Model with regular thickness

Divide the dough into approximately 24 portions of 35 to 40 g. With lightly moistened or greased hands, make low, rounded shapes, approximately 5 to 6 cm long and 1.2 to 1.5 cm thick. Place on the baking tray without touching each other.

4. Firm the nuggets before breading

Place the baking tray in the freezer for 25 to 30 minutes. The goal is to make the pieces firm enough to handle without warping, but not frozen like stone. Meanwhile, heat the oil to 175°C and arrange the pre-layer and breading dough.

5. Make a thin, cold dough

In a bowl, mix the flour, 70 g of starch, yeast and salt. In another, quickly beat the egg with the cold sparkling water. Pour the liquids over the dry ingredients and mix just until there are no large pockets of flour. The dough should be fluid and cover a spoon with a thin film; small lumps are no problem.

6. Bread without creating a thick crust

Dip each firmed nugget in the pre-coat starch and shake off the excess well. Dip into the liquid batter, let the excess drip off for 2 to 3 seconds and place directly in the oil. Do not apply a second layer: the goal is a thin crust.

7. Fry in small batches

Fry 5 to 6 nuggets at a time, keeping the oil between 170 °C and 175 °C. Cook for about 4 to 5 minutes, turning once if the pieces are not fully submerged. Remove to a wire rack, not a closed dish, and wait for the oil temperature to return to within range before the next batch.

8. Check the center before serving

Measure one of the larger nuggets with a culinary thermometer inserted from the side to the center. Processed chicken must reach 74°C. If it has not yet reached this temperature, return the piece to the oil and check again before serving.

Right spot / how to know it’s ready

The cone should be light golden, dry to the touch and firm, without thick sheets of dough. When cutting, the inside should appear compact and uniform, without defined cubes of chicken, but still moist. Internal color alone does not confirm safety: as it is processed chicken, use 74°C in the center as an objective cooking reference.

Tips for the recipe to work out

Keep meat really cold

Warm chicken becomes softer and more difficult to shape, as well as heating up even more during processing. Cooling the cubes before grinding helps to obtain a thin dough without losing control of the texture.

Process until sticky, not just ground

If there are still separate pieces of meat, the nugget will have the texture of meatballs or minced chicken. The dot is a paste that holds together and adheres to the spatula, without needing a large amount of flour to bind it together.

Standardize thickness

1.2 to 1.5 cm pieces cook more predictably. If some are too thick, the shell may darken before the center reaches a safe temperature.

Shake off excess starch

The pre-coat serves to help the liquid dough adhere. A thick white layer of starch creates doughy pockets and leaves the cone heavy.

Control the temperature between batches

Oil below 170 °C tends to make the layer more oily; much above 175°C darkens the surface too soon. Wait for the oil to recover before adding a new batch.

Substitutions and variations

Can I only use chicken breast?

You can. The dough is lighter and thinner, but tends to result in less juicy nuggets. The small proportion of thighs in this version helps to preserve tenderness without taking away from the uniform appearance.

Can I use still water?

You can, as long as it is very cold. The cone still works, but it tends to be a little less light and airy than with sparkling water.

Can I make it in the air fryer with the same dough?

The liquid batter in this recipe was designed for deep frying and can be drained in the air fryer before firming. For an air fryer, it would be necessary to change the breading system, which produces a different crust than the fast food proposal of this recipe.

How to store

Treat raw dough like ground poultry. Keep refrigerated at 4°C or below and, if not using immediately, the reference limit for raw ground poultry is 1 to 2 days. To freeze before cooking, place the shaped nuggets on a baking tray, transfer to their own packaging and keep at -18°C; The quality reference for frozen ground poultry is 3 to 4 months. Defrost in the refrigerator and bread only after defrosting. Cooked nuggets can be stored in the refrigerator at 4°C or below for 3 to 4 days. In the freezer at -18°C, the specific reference for chicken nuggets or patties is 1 to 3 months for best quality. Cool and package without leaving it at room temperature for more than 2 hours. When reheating, bring the center back to 74°C.

How to serve / side dishes

Serve immediately after frying with ketchup, mustard and honey, barbecue sauce or a sweet and sour sauce. To keep the cone dry while finishing the batches, leave the nuggets ready on a wire rack, uncovered.

Common mistakes

Why did my nuggets fall apart in the oil?

The dough may have been poorly processed, the pieces may have been too soft during breading or the oil may have received too many nuggets at once. Process until the mixture sticks, place the pieces in the freezer and fry in small batches.

Why did the cone become thick and doughy?

Normally there is too much starch in the precoat or the liquid batter is thick. Shake off excess starch and adjust the dough with small amounts of ice water until it forms just a thin film.

Why did they brown on the outside and remain raw in the center?

The pieces may be too thick or the oil too hot. Keep the thickness around 1.2 to 1.5 cm, control the oil within the indicated range and confirm 74 °C in the center with a thermometer.
