Crispy and Juicy Air Fryer Wing Coxinha: Time, Temperature and Right Point

This version uses defrosted wing drumsticks, with similar weight and size, and separates the cooking from the final crisping stage. Time is a reference: the decisive point is the combination of dry, crispy skin and a safe internal temperature.

Ingredients

• 700 g of chicken wing drumsticks (drumettes), defrosted, preferably 7 to 9 pieces weighing 75 to 100 g each

• 1 tablespoon of vegetable oil or mild olive oil (15 ml)

• 1 1/4 teaspoon of salt (about 7 g)

• 1 teaspoon sweet or smoked paprika

• 1 teaspoon of garlic powder

• 1/2 teaspoon of onion powder

• 1/4 teaspoon ground black pepper

Preparation method

1. Dry and standardize the pieces

Dry the wing drumsticks very well with a paper towel, especially the skin. Separate pieces of similar size; If there are drumettes that are much larger than the others, leave them for a separate batch. The wet surface produces steam and delays crisping.

2. Season without creating a wet layer

Mix the oil, salt, paprika, garlic, onion and pepper. Cover the chicken until a thin, uniform film forms, with no excess liquid at the bottom of the bowl. Meanwhile, preheat the air fryer to 190°C for about 3 minutes, if your model recommends preheating.

3. Mount a single layer

Distribute the drumettes in the basket without overlapping them. Leave small spaces for air to circulate around the skin. If all the pieces do not fit snugly, cook in two batches; The time indicated below is per batch.

4. Cook the center before reaching for the final color

Bake at 190°C for 12 minutes. Open the basket, turn all the pieces over and bake for another 8 minutes at 190°C. For smaller drumettes, start measuring the internal temperature at this stage; pieces over 100 g may need a few extra minutes.

5. Finish crisping at 200°C

Increase to 200°C and bake for 2 to 6 minutes, checking every 2 minutes. The skin should be firm, dry and golden, with slightly cracked areas. Measure the temperature at the thickest point of one of the largest pieces, without touching the tip of the thermometer to the bone.

6. Check the point and rest

Remove when all checked pieces reach at least 74°C in the center. Let rest for 3 minutes before serving. If the chicken reaches 74°C and the skin is still soft, return to the air fryer at 200°C for another 1 to 3 minutes, just to dry the surface.

Right spot / how to know it’s ready

Color alone does not confirm crispness or safety. The finished skin is tight, dry and with small cracked areas; When pressed lightly with tweezers, it doesn't feel rubbery or wet. The meat must reach at least 74 °C in the thickest part, measured with a thermometer without touching the bone.

If the surface darkens too soon but the center is still below 74°C, reduce to 180°C and continue until the safe temperature is reached. Paprika and seasonings can darken before the skin really crisps up.

Tips for the recipe to work out

Dry the skin before seasoning

It is one of the steps that most influences the texture. Water on the surface turns to steam and makes the skin softer, even when it already looks golden.

Do not fill the basket until it touches each item

Air circulation is part of the method. When the drumettes are piled up, they cook in the steam released by the chicken itself and brown unevenly.

Use pieces of similar size

Small drumettes reach the point before the big ones. Separating sizes reduces the risk of drying out the smaller ones while the center of the larger ones is still below the desired temperature.

Save sugary sauces for last

Honey, barbecue, ketchup and other sauces with sugar can burn on the heating element before the chicken cooks inside. If you want to use it, brush on a thin layer for just the last 1 to 2 minutes or serve on the side.

Measure away from the bone

Touching the probe to the bone can distort the reading. Look for the meatiest portion and insert the thermometer into the center of the meat.

Substitutions and variations

Paprika can be omitted or swapped for hot paprika; this changes flavor and color, not the cooking method. Garlic and onion powder can be reduced or eliminated if you want a more neutral seasoning.

The oil can be reduced if the pieces have very greasy skin, but a thin film helps the seasonings to adhere and promotes a uniform surface. Avoid adding liquid marinades in large volumes if your main goal is crispy skin.

Whole wings or tulips do not have exactly the same geometry as drumettes. Use the same timing signals and the same internal temperature, but adjust the time depending on thickness and size.

How to store

Once ready, refrigerate the wing drumsticks in a sealed container for up to 2 hours. In the refrigerator at 4°C or below, consume within 3 to 4 days. To keep it longer, freeze it; The official quality range for frozen cooked meat or poultry is 2 to 6 months, although the skin will lose crispiness as it thaws.

To reheat, heat in the air fryer at 180°C for about 5 to 8 minutes, or until the center returns to at least 74°C. If it is frozen, thaw it first in the refrigerator to heat more evenly.

How to serve / side dishes

Serve immediately after resting, when the skin is crispier. Pair with lemon, crunchy salad, potatoes, roasted vegetables or sauce served on the side.

Common mistakes

Why was the skin golden but rubbery?

Normally there is excess moisture or items that are cramped in the basket. Dry the chicken better, reduce the quantity per batch and let the air circulate. The color caused by paprika or seasonings does not replace the sign of dry, firm skin.

Why did it burn on the outside before cooking close to the bone?

This usually happens with large pieces, high temperature from the beginning or sugary seasonings. Cook first at 190°C, finish at 200°C and, if the surface is already dark, reduce to 180°C until the center reaches 74°C.

Why was the meat dry?

The most common reason is to prolong cooking long after the center has reached the required temperature, especially in small pieces. Start measuring early when the drumettes are less than 75 g and remove the smaller ones as soon as they are ready.
