Crispy Air Fryer Cassava: fresh, cooked or frozen

Cassava is golden and crispy on the outside, soft on the inside, with separate instructions for fresh, cooked or frozen cassava. Preparation method

1. Padronize o tamanho

If using fresh cassava, cut the peeled root into lengths of about 7-8 cm. After cooking, divide the billets lengthwise into sticks approximately 2-3 cm thick and remove the central fiber when it becomes evident. For already cooked cassava, adjust the pieces to a similar size. Pre-cooked frozen food can remain in the cut in which it was frozen, as long as the pieces are not too thick.

Place the fresh cassava in a pan, cover with cold water and heat. For pre-cooked frozen cassava, bake without thawing for about 20-25 minutes. Right spot / how to know it’s ready

The cassava should have golden to light brown edges, dry and slightly wrinkled surface areas and a skin that offers resistance to biting. Inside, the crumb should be warm, soft and fibrous, without a hard core.. If the outside is still light and damp, there was a lack of drying, space in the basket or a few minutes of hot air; if the center is firm or raw, the fresh cassava needed more pre-cooking in water.

Tips for the recipe to work out

Dry before browning

Wet cassava tends to cook in its own steam before creating a crust. Draining well and letting the moisture evaporate makes more of a difference than adding a lot of oil.

Do not fill the basket to the limit

The air needs to reach the sides of the pieces. Two looser batches usually give a more uniform result than one full, longer batch.

Keep the sticks similar

Common mistakes

Why did the cassava become hard inside?

In the fresh version, pre-cooking ended too soon or the pieces were too thick. Return the fresh cassava to boiling water and cook until a fork goes in easily before trying to brown it again.

Why did it become soft and discolored?

The most common reasons are a damp surface, a basket that is too full or a low temperature. Dry better, reduce the quantity per batch and work at 200 °C, checking after 15 minutes.

Why did the pieces break?

The cassava was cooked beyond doneness or handled while it was still very hot and fragile. When pre-cooking, stop when it is soft but whole; let it cool before cutting and stir with tongs or a wide spatula.

Can I put fresh raw cassava directly in the Air Fryer?

It is not the recommended method for this recipe. The fresh root must be prepared and well boiled in water first; then the Air Fryer comes in to dry, brown and create the crust.
