Ingredients

• 300 g of cooked white rice, cold and loose, approximately 2 cups

• 1 large egg

• 50 g finely grated Parmesan cheese 

• 40 g of wheat flour, approximately 1/3 cup, plus up to 20 g if necessary to adjust the dough

• 15 g of cornstarch, approximately 2 level tablespoons

• 2 tablespoons of finely chopped parsley and chives

• 1 small clove of garlic, grated or finely chopped

• Up to 15 ml of milk, only if the rice is very dry and the dough does not come together

Preparation method

1. Check out leftover rice

Use rice that has been refrigerated within 2 hours of preparation and kept in the refrigerator at 4°C or below. If it has been left at room temperature for more than 2 hours, discard it. Separate the grains with a fork; Cold, relatively dry rice makes it easier to control the dough.

2. Create the league without soaking

5. Heat the oil correctly

Heat the oil in a tall, thick-bottomed pan to 175-180 °C. The oil layer must not exceed half the height of the pan and heating must always remain under supervision. Using a thermometer, maintain this range during frying. Without a thermometer, add a small crumb of dough: it should bubble immediately and gradually brown, without darkening within a few seconds. The oil should not smoke.

6. Test the first unit

Fry a cupcake alone for about 3 minutes, turning when necessary, until it is evenly golden. If it cracks or falls apart, remove the dough from the refrigerator, mix in another 10 g of flour and shape again. If it gets dark too quickly before heating the center, reduce the heat and wait for the oil temperature to drop a little.

7. Fry in small batches

Fry 4 or 5 dumplings at a time for 2 1/2 to 3 1/2 minutes, keeping the oil between 170 and 180 °C. Don't crowd the pan: adding too many at once drops the temperature and favors oily dumplings.. Remove with a slotted spoon and let it drain on a rack; If you don't have a wire rack, use paper towels without stacking the cookies.

8. Serve immediately
